Most of the cinnamon on the supermarket shelves here in North America is not cinnamon at all, but cassia. Ceylon cinnamon is the real thing. It is paler in colour than cassia, and the whole quills are thinner and more brittle. Also, the fragrance is more delicate, though still deliciously warm and sweet.

I leaned from the Pantry Spice company that there are two different cinnamons. And thatvwhat we usually use is not original cinnamon. Ceylon cinnamon is original cinnamon. It’s more mild and gentle in taste than what I used before. I like to bake with it and occasionally I am making spiced hot teas. I used it for fast piccleling and it worked great. If you like to bake I recommend this spice. You will see the difference.
